Stuffed Zucchini


1 Zucchini
1 c Ground turkey or turkey sausage
1 Small Tomato
1c Couscous or Quinoa
1/2c Parmesan cheese (optional)

Cook quinoa or couscous and turkey by directions given.
Slice zucchini down the middle from top to bottom, then cut those in half. You should have 4 slices.
Cut out the middle area of the zucchini and cover drizzle with olive oil.
Place zucchini slices under broiler to soften and toast.
Place in the middle of each zucchini slice even amount of cooked quinoa/couscous, cooked turkey, tomato, and parmesan.
